Why does my soup keep fermenting?

Every time I make soup, it always ferments....at least that's what I think it's doing. It starts getting like bubbly, like carbonation bubbles only not...they're tinnier and it tastes realllllly sour. It's fine when I like just make it but if it doesn't all get eaten within like an hour it's absolutely disgusting. why does it keep happening?
